Kaesler own vineyards in the Watervale and Polish Hill sub-regions of the Clare Valley. The 2014 Clare Wine Co Cabernet fruit was sourced from the Polish Hill vineyard, from plantings that date back to the mid-1980s.
Nose: Nuances of cedar wood with liquorice and dried fruit aromas
Mouth: Cherries, blackcurrants, and a touch of mint are framed by gentle food-friendly tannins
Winemaking notes: We knew that the harvesting of the Cabernet was going to be tricky with the temperature pushing the high 30s in early February. The heavy rainfall on the 15th had us thinking that with our winery already full of Shiraz, BV Cab and Grenache harvesting before the 27th was out of the question. Fortunately, the rain did also bring cool weather and cold nights, so we could wait.
After harvesting fermentation took 9 days and the wine was pressed and transferred to oak. 25% new French oak (with the balance 3 and 4 year-old French oak barriques) was used for 12 months. This has given the wine a hint of oak whilst still allowing the fruit to dominate.
